Appassimento

Grapes: Sangiovese.
Production Area: Romagna Hillsides.
Alcohol: 14.5%.
Wine Making: Carefully sorted Sangiovese grapes are gently crushed into stainless-steel tanks, Maceration and Fermentation lasts 3 weeks until a natural balance of sugar and alcohol is reached.
Aging: The wine is aged in glass lined concrete tanks for 6 months and then bottled.
Tasting Notes: This Sangiovese shows deep aromas of Cherry with a Jamy fruitiness. A bold and full-flavored wine.

The Appassimento Process

• Late harvest second part of SEPTEMBER
• Selection of grapes started from the vineyards, harvest only by hand
• Max 3 kg per cassette
• Storage for at least one month in a humidity controlled “fruttaio” in order to obtain a slow process of lost of water
• Crunching in the early days of November cassette by cassette
• Alcoholic fermentation with selected yeasts and maceration of 21 days
• Aging in concrete tank for 6 months

A large basin, which extends from Rimini to Casola Valsenio passing through the territories of Cesena, Forlì and Faenza, up to the sandy soils of the Po Delta Park to the north-east, including the flourishing Ravenna plain in the center.
